Eat This: Non-GMO & Gluten Free Mediterranean Bites

Eating healthy and living that busy lifestyle don’t exactly go hand in hand. It can get challenging, especially if you are vegetarian or have any food allergies/restrictions. I always try to eat fresh food whenever possible, but when I heard about this new line of vegetarian, gluten free and non-GMO project verified frozen falafel bites, I had to give them a try.

These protein and fiber packed lil bites come with tzatziki sauce and are available in four different flavors: Kale, Garlic Pesto, Southwestern and Sweet Potato. They are packaged in a resealable pouch for added convenience and freshness.
Nates Mediterranean BitesThe bites are super convenient since they are pre-cooked so all you have to do is thaw them out and they’re good to go! Additionally, you always have the option to cook them in the oven, microwave or fryer.

I decided to try the Kale flavor first. I cooked them in a toaster oven for about 12 minutes. In the meantime, I whipped up a little arugula salad with feta cheese and used the included tzatziki sauce as a base for my dressing (adding in some oil, lemon juice and a little salt and pepper). I served it with some beet hummus (from Trader Joes) and some fresh pita bread. The results? Insanely yum and I can’t wait to try the rest of the flavors!

Glow Breakfast Bowl

Do you think you might want to take over the world today? I kinda woke up feeling like I did…ever have that feeling?
Maybe you have an impossibly long “to-do” list, a huge work presentation that needs serious prepping or just simply, a long day ahead of you. Well, you need to start your day off on the right foot with a powerhouse breakfast that will keep you satisfied, energized and glowing for hours to come…because lets face it, sometimes we’re just too busy to fit in those snacks we’re supposed to be eating throughout the day.

This breakfast is jammed with good quality fats and omega 3’s, high in fiber and protein and very low in sugar. It provides a nutritional punch with essential vitamins and minerals such as Vitamin A, B vitamins, Calcium, Magnesium. Potassium and Phosphorus to name a few. It tastes amazing, helps to regulate blood sugar levels and provides lots of skin nourishing vitamins for healthy, glowing skin.

Ingredients – Oatmeal:
1/4 cup Bobs Red Mill organic scottish oatmeal
3/4 cups pure water
1 T Nutiva organic coconut butter
dash of salt
Ingredients – Smoothie:
1/2 frozen banana, sliced
1/2 frozen avocado, sliced
1/2 cup unsweetened almond milk
1 T raw almond butter
1 organic strawberry, sliced
1 tsp. flaxseed meal
Vegan Glow Breakfast Bowl

Bring water and dash of salt to a boil
Add oatmeal, reduce heat, cover and simmer for about 7-8 minutes
Stir in coconut butter
Put avocado, banana, almond milk and almond butter in a blender and blend until smooth
Place oatmeal into a bowl. Using a spoon, create a well in the middle of the bowl by pushing the oatmeal to the sides
Pour the smoothie into the center well
Top with flaxseed meal and a strawberry

*if you’re not into the whole mixing hot & cold thing then just eat the oatmeal and smoothie separately 🙂
